Lunch time may be the only time of the day I feel uninspired to cook. I am rather picky, liking mainly warm foods including sandwiches. In the past I have tried to take the traditional turkey sandwich or pbj to work, only to find myself across the street for takeout instead. Though I now have a little more free time around lunch, I still feel confused about what to make for lunch. I resort to leftovers or more takeout. While poking around online, I found a blog post about Sweet and Spicy Caramelized Onion BBQ Grilled Cheese and it inspired my own creation. This is super simple, it just takes a little extra time to caramelize the onions. Decent bread is important and if you want to go the extra mile, make your own. See our recipe here. Enjoy!
- 2 slices bread
- 4 thin slices sharp cheddar
- ½ tbs brown sugar
- ¾ large red or yellow onion, thinly sliced
- 2 Tbsp butter
- 1 tbs olive oil
- Heat olive oil in a skillet over medium-high heat. Add the sliced onion and stir occasionally until color changes to slightly translucent, add brown sugar and cook another 5 minutes. Reduce heat to medium-low for another 10-15 minutes. Stir occasionally. Remove onions from skillet and set aside.
- Spread 1 Tbsp of the remaining butter onto one side of each slice of bread. Lay half the cheddar cheese on the bread. Divide caramelized onion among the sandwiches, then top with the rest of the cheese. Finish assembly by placing remaining bread slices on top. The butter sides of the bread should both be on the outside of the sandwiches.
- Melt the remaining butter in the skillet on medium-low (Since there is butter on the bread already, you may not need this). Cook sandwich, flipping when bread is golden brown on one side and cheese begins to melt. If cheese is not melting quickly enough, place a lid over the pan or use a heavy skillet to place on top and press the sandwiches down.
