What an odd combination; peaches, blue cheese, sweet onions and we topped it off with a little chicken?!? Odd and wonderful, sweet and sharp, easy yet complicated; this is my kind of pizza. I had gotten a ton of donut peaches in my CSA and as always was looking for a way to use up ingredients on hand. It turns out I had blue cheese, peaches, onions, cheese and pizza dough. Sometimes I get in these moods where I just want to spend the day/evening in my kitchen creating something, anything new to delight my senses. This was one of those evenings. Work was done, hubby was busy and it was just me, my kitchen and whole lot of imagination. I did find a recipe to work off of sure, but that was just the spring board. 🙂 May you use my recipe to create your own take and experience. Enjoy!
1 ball pizza dough
One large red onion, thinly sliced.
Two tablespoons olive oil.
Three tablespoons balsamic vinegar.
1 tsp brown sugar
4 donut peaches or 3 regular peaches.
Shredded chicken *Optional
Preheat oven to 425 degrees. Heat olive oil in a skillet. Add thinly sliced onions and saute until browned. When the onions are browned, add balsamic vinegar and the brown sugar and saute until caramelized, bringing out the onion’s natural sweetness. While the onions are cooking, prepare the dough. Rub dough with olive oil and salt. Cut the peaches into slices and layer onto dough. Next add onions (and chicken), then cheese and final sprinkle with salt and pepper. Bake for about 20-25 minutes checking regularly. Remove from oven and let rest 5 minutes.
