My sister made a cucumber salad to go with both lunch and dinner dishes during our visit. Light, crisp and refreshing; just what a salad should be. Though I did not get an official recipe, this is what I came up with and it’s pretty close. Enjoy.
2 tbs olive oil
2 tbs white wine vinegar
1 tbs mustard
1 large cucumber
Peel and cut cucumber into thin slices. Whisk olive oil, vinegar, mustard, salt and pepper in a bowl until blended. Add cucumber. Mix.
